Ingredients
| 1 tbsp | Oil |
| 1 | Onion, chopped |
| 3 | Carrots, chopped |
| 3 | Celery, chopped |
| 5 | Garlic Cloves, minced |
| 2 | Medium Potatoes, chopped |
| 1.5 cups | Green Lentils |
| 1 can | Crushed Tomatoes |
| 4 cups | Broth |
| 1 tbsp | Maple Syrup |
| 1 tsbp | Balsamic Vinegar |
| 1 | Bay Leaf |
| 1 tsp | Paprika |
| 1 tsp | Cumin |
| 1 tbsp | Italian Seasoning |
Instructions - Instant Pot
- Set to Saute, add Onions and cook 3-5 minutes
- Add Garlic, Carrots, Celery, Potatoes, cook 1 to 2 minutes
- Add remaining ingredients and stir. Set to high pressure for 15 minutes
- Natural release for 30 minutes
