Ingredients
| 1 tbsp | Oil |
| 1 | Onion, diced |
| 2 | Garlic Cloves, minced |
| 4 | Carrots, chopped |
| 3 | Celery Stalks, chopped |
| 2 tbsp | Garam Masala |
| 1.5 tsp | Curry Powder |
| 1.5 tsp | Turmeric |
| 1 tsp | Salt |
| 1/2 tsp | Pepper |
| 4 cups | Chicken Broth |
| 1 | Apple, grated |
| 2 | Chicken Breasts, diced |
| 1 cup | Rice |
| 1 can | Coconut Milk |
Instructions - Instant Pot
- Press Saute and add Oil, Onion, cook 3-5 minutes. Add Garlic, cook 1 minute
- Add Carrots, Celery, cook 5 minutes. Add all spices and cook 1 minute
- Add Broth, Apple, Chicken, Rice. Close lid, set to Manual for 25 minutes. Natural release after cooking
- Stir in Coconut Milk
