Ingredients

1/2 cupDry Lentils (green or brown)
1Bay Leaf
1Garlic Clove
1/4 tspSalt
2 cupVegetable Broth
1Diced Onion
1 canMarinara Sauce
TasteDiced Bell Peppers
TasteDiced Mushrooms

Instructions

  1. In saucepan combine Lentils, Bay Leaf, Garlic, Salt and, Broth. Bring to gentle simmer and cook until lentils are tender, should take 20-35 minutes
  2. Drain, discard Bay Leaf and Garlic
  3. Add onion to Lentils and saute
  4. Stir in Marinara and until warm. Add Peppers and Mushrooms
  5. Use sauce with spaghetti, or your choice of pasta. Makes a great lasagna too
  6. Sauce can be stored for up to 4 days.
