1/2 cup
Dry Lentils (green or brown)
1
Bay Leaf
1
Garlic Clove
1/4 tsp
Salt
2 cup
Vegetable Broth
1
Diced Onion
1 can
Marinara Sauce
Taste
Diced Bell Peppers
Taste
Diced Mushrooms
Instructions
In saucepan combine Lentils, Bay Leaf, Garlic, Salt and, Broth. Bring to gentle simmer and cook until lentils are tender, should take 20-35 minutes
Drain, discard Bay Leaf and Garlic
Add onion to Lentils and saute
Stir in Marinara and until warm. Add Peppers and Mushrooms
Use sauce with spaghetti, or your choice of pasta. Makes a great lasagna too
Sauce can be stored for up to 4 days.
