Ingredients

2Onions, thin sliced
1.5 to 2kg (3 to 4 lbs)Chicken
2Garlic, minced
1 tspOregano
1 tspSalt
1/2 tspBasil
1/2 tspPepper
1Bay Leaf
1 can (400ml)Diced Tomatoes
1 can (400ml)Tomato Sauce
1 cupMushrooms, sliced
1/4 cupWater (if needed)

Instructions - Instant Pot

  1. Add onions first to cover bottom of the Instant Pot
  2. Add remaining ingredients. Set to High Pressure for 15 minutes
  3. Allow natural release for 10 minutes, then release remaining pressure
  4. Discard Bay Leaf and serve with rice or pasta
