Ingredients

1 cupflour
1 tspsalt
1/3 cupwater
3 tbspolive oil
2-3 tspspice mix, your choice

Instructions

  1. Mix flour, salt, spice mix
  2. Add in water and oil, mix until combined and then gently knead by hand to mix all ingredients
  3. Let dough rest for 30 minutes
  4. Cut into quarters. Roll to approximately 3mm. If possible use a pasta roller attachment for a Kitchenaid. When hand rolled this dough will relax and will need to be rolled multiple times
  5. Preheat oven to 400°F
  6. Cut crackers into 2-3cm squares, place onto baking sheet covered with parchement paper. This can be placed close together as they will not expand
  7. Bake for 10 minutes then rotate the baking sheet 180°. Bake another 5 minutes and then watch closely. These should be golden brown on top. Pull one out and test it for crunch, there should be no soft dough texture. These will go from nicely browned to burned very quickly so keep an eye on them
  8. Remove from oven and let cool on the baking sheet to finish and get a little more crunchy
  9. Store in a ziplock bag to keep them crunchy
